Raspberry Season

The raspberry plants have been going strong for a while now and show no sign of slowing down.  I am not complaining though.  They are quite delicious.

I have used the raspberries a couple of different ways.  First, I did a remake of the Lemon Raspberry cake I made for my cousin’s baby shower back in June.  This time around I boiled the raspberry curd a little bit longer and had plenty of time for the cakes to cool before assembling them.  Both of these things helped prevent the filling leakage frustrations from before.

Also I have recently learned how easy it is to make raspberry jam.  There are two ingredients.  Two.  Maybe most people already knew this and consider it common knowledge, but color this girl surprised.  I have made two batches of jam and have plans to make many more.

Thanks for teaching me something new raspberries.  I love you even more now!
